Ingredients
  

Crust
  • 2 cups  chocolate graham wafer crumbs
  • ¼ cup coconut sugar
  • ¼ cup coconut oil
Cheesecake
  • 2 blocks  softened cream cheese/vegan cream cheese
  • ½ cup  icing sugar
  • ½ cup Castle Kitchen Double Decadent Dark Hot Chocolate mix
  • 1 cup almond milk
  • 1 cup coconut cream (or whipping cream)
  • 1 cup mini marshmallows

Equipment

  • 1 Springform Pan
  • 1 Mixing Bowl

Method
 

  1. Combine crust ingredients in a bowl
  2. Transfer to a springform pan. Pat down with a spoon to the edges
  3. In a mixing bowl, beat cream cheese until light and fluffy. Add icing sugar and hot chocolate. Mix until smooth
  4. Add almond milk and coconut cream slowly until smooth and fluffy
  5. Fold in the marshmallows. Pour into pan with prepared crust
  6. Freeze for minimum of 4 hours

Notes

TOP TIP: Set aside 3 tbsp of dry crumbs to sprinkle on top of the cheesecake. Don't forget to drizzle chocolate syrup on top!
